Classic Hoisin Ginger Ribs

Classic Hoisin Ginger Ribs

1 rack (3lbs) pork spareribs

1/2 cup classic Hockley beer (save remainder to braise the ribs)

1/4 cup hoisin sauce

3 T agave ( or honey)

3 T dark brown sugar

3 T soy sauce

1 T sesame oil

1/2 med. red pepper

1 small onion chopped

3″ peice of ginger peeled and sliced

1/2 can San Marzo tomatoes

3 T plum sauce

Puree all ingredients. Pour over ribs and marinate overnight.

Braise the ribs with 1/2 the sauce and remaining beer. (325 F for 1 1/2 hours)

Reduce the remaining sauce by 1/3

325 F for 1 1/2 hours

Let set for 1/2 hour after you shut the oven off.

Brown the ribs on the grill and brush with remaining sauce.
